There are a LOT of paleo banana bread recipes out there. I probably didn’t need to create a new one. But you know me! I can’t help myself. This paleo, dairy-free, sweetener-free banana bread is bare bones, plain Jane. But don’t let that stop you from adding nuts, chocolate chips, coconut, or all of the above. I’ve been making a version of this coffee cake for years, and it’s always done me right. Before I went paleo, it was made with a blend of gluten-free flours. For a while, I’ve made it with just almond flour and it’s come out great, but… I’m a perfectionist when it comes to the things I eat.
